Sake has been misunderstood for too long. Good quality sake is nothing like that warm, sweetened, fortified, domestically produced stuff that you may have been unfortunate enough to have had in a "sake bomb". True sake is rice wine made in one of the seven appellations in Japan. There are various quality levels of Junmai, Gingo and Daiginjo as well as fortified (Honjozo), unfiltered (Nigori), and sparkling. Sake can be incredibly complex and pair well with a variety of foods.
